How the cooking measurement converter works

Volume measures convert between each other exactly. Converting volume to weight does not, because it depends entirely on what is in the cup: a metric cup holds 150 g of flour, 200 g of sugar, 250 g of water and 340 g of honey.

That is why professional baking works by weight. The cup measures here use standard densities, and even then how the flour was scooped changes the result by 20%.

How many grams in a cup?

It depends entirely on the ingredient. A metric cup holds 250 g of water, 200 g of sugar, 150 g of flour and 340 g of honey.

Why do recipes use weight?

Because volume measures of dry ingredients vary by up to 20% depending on how they were scooped. Weight removes that entirely.

Is an Australian tablespoon different?

Yes — 20 mL against the 15 mL used almost everywhere else. It is four teaspoons, not three.

Is a US cup the same as a metric cup?

No. A US cup is 236.6 mL and a metric cup 250 mL, a 5.6% difference that compounds across a recipe.

How should I measure flour by volume?

Spoon it into the cup and level it off. Scooping directly compacts it and can add 20% by weight.
