How the turkey thawing calculator works

In the fridge a turkey thaws at about 24 hours for every 2 kg (4–5 lb): a 6 kg bird needs three days, and it can then wait another day or two. The cold-water method is faster — about 30 minutes per pound (65 minutes per kilogram) in a sealed bag in cold water changed every 30 minutes — and the bird must be cooked straight after. Never thaw at room temperature.

Formula: fridge: hours = kg ÷ 2 × 24; cold water: minutes = kg × 65

Frequently asked questions

Why not thaw it on the bench?

The outside reaches the temperature bacteria multiply at (above 5 °C / 40 °F) many hours before the centre thaws. Fridge or cold water keeps the whole bird below that line.

Can I cook a turkey from frozen?

Yes, in the oven, allowing about 50% longer than the usual roasting time and checking the centre reaches 74 °C (165 °F). It cannot be stuffed or brined, and it will not be as even.

How do I tell it is fully thawed?

The legs and wings move freely, the cavity has no ice, and a thermometer in the thickest part of the breast reads above 0 °C. If there are still ice crystals inside, give it a few more hours.

Why change the water every 30 minutes?

Because the water warms up; keeping it cold keeps the surface of the bird safe. A sealed bag stops water getting in and the bird contaminating the sink.
